Spices

Pepper was among our earliest spices. It has played both a political and social role as a spice. A long time ago it was considered an appropriate gift for royalty to give and to receive. Many times people used pepper to pay their taxes. Ransoms were once even paid in amounts of pepper.

Pepper grows in much the same way as ivy does. It grows up a tree. Many times poles are set up to let the vines grow up them. Peppers start bearing in two to five years and under good conditions may produce for 40 years or more. Pepper is found in the tropical countries. It is a native of the warm islands of the East Indies.

Most of the green berries are harvested before they are ripe. They turn black as they dry in the sun or over a fire and are reduced to a powder. This powder is known to us as black pepper.
